Chenpi darkens as it ages, but “the darker, the better” is not accurate. Properly aged peel is usually deep brown rather than pure black.
Limits of Color Judgement
Color alone cannot determine age or quality. Unusually dark or overly uniform color should be treated with caution.
Other Checks
- Smell for a natural aroma;
- Feel the dryness, thickness, and texture;
- Consider infusion color and taste together.
Overall, color is only one reference and should not be the sole criterion.
