Everyday orange peel can be used to make chenpi, but it needs cleaning, drying, and sufficient aging time.
Basic Steps
- Clean the peel surface and dry it;
- Sun-dry or use steam-dry processing;
- Store in a ventilated, dry place for aging.
Storage Notes
- Avoid sealing or low-temperature storage; keep good airflow;
- Inspect periodically and re-dry if damp;
- Insufficient aging often leads to stronger bitterness.
In general, at least two years of aging is needed to be considered chenpi, and longer aging gives a smoother brew.
