Chenpi brewed in a thermos for half a day is generally drinkable, but long steeping makes it more bitter and astringent.
Suggestions
- A common steeping time is 3–5 minutes, with longer time for higher-aged peel;
- Avoid overly long steeping and prefer fresh brews;
- Add rock sugar or honey if the taste is too bitter.
Thermoses, glass cups, and ceramic cups all work for brewing.
