Bitterness in Chenpi tea is not always a sign of poor quality; it is often related to the age, variety, and brewing technique. Here are the four most common reasons and how to fix them.
1. Insufficient Aging
Reason: Chenpi aged less than 10 years is considered "young." The volatile oils and limonoids in the peel have not fully transformed. These peels are better suited for soups or cooking; if used for tea, they often produce bitter, sour, and astringent flavors. Solution: For drinking, it is recommended to use Pubei Chenpi aged for at least 10 years, as the higher age ensures a more mellow and fragrant taste.
2. Wrong Peel Variety
Reason: Based on harvest time, Chenpi is classified into Green Peel (Qing-pi), Slightly Red Peel (Er-hong), and Fully Red Peel (Da-hong).
- Green Peel: Harvested when unripe, it has very low sugar content and the strongest bitterness.
- Da-hong Peel: Harvested when fully ripe, it has high sugar content and the mildest bitterness. Solution: For daily tea, Da-hong Peel is the best choice for its sweet and smooth profile.
3. Improper Brewing Ratio
Reason: More Chenpi is not necessarily better. When too much peel is used relative to the water, bitter substances become over-concentrated, resulting in an astringent soup or off-flavors. Solution: The golden ratio is approximately one whole three-segment Pubei Chenpi (about 5 grams) per 250ml of water.
4. Incorrect Brewing Technique
Reason: Over-steeping is the main culprit for bitterness. Chenpi's flavor extracts slowly; if left in hot water too long, the bitterness will dominate. Solution:
- Quick Pour: After adding water, boil or steep for 3-5 minutes and then pour out the tea.
- Immediate Separation: Once ready, pour the tea into a fairness cup immediately. Do not leave the Chenpi soaking in the pot.
