The three-steam three-dry method is a home-friendly way to process chenpi with clear, repeatable steps.
Steps
- Choose ripe citrus, soak in salt water for about 15 minutes, wash the surface, and rinse clean;
- Peel the citrus, keeping pieces as large as possible;
- Sun-dry with the white pith facing up until fully dry;
- Steam the dried peel for 10–15 minutes, then dry again; repeat at least three times;
- After the three cycles, dry thoroughly and store for aging.
Notes
Direct sun-drying has fewer steps but requires more careful storage management. The three-steam three-dry method often produces a softer taste for brewing.
