Mistake 1: Using Warm Water
Chenpi is relatively firm, and warm water does not release aroma well. Use boiling water. If simmering in a kettle, start with cold water and simmer for 2–3 minutes after boiling.
Mistake 2: Using Too Much
Too much chenpi makes the drink overly bitter and strong. A common amount is about 3–5 g, adjusted to taste.

Mistake 3: Steeping Too Long
Over-steeping intensifies bitterness. For brewing, a short steep is sufficient; for simmering, 2–3 minutes after boiling is usually enough.

Extra Tip
Rinse chenpi quickly with clean water before brewing to remove surface dust, but avoid vigorous scrubbing.
